Sweet Potato Casserole

3 cups sweet potatoes (cooked and mashed)
1/3 cup brown sugar
1/2 tsp salt
1 tsp vanilla
1/3 stick butter

Top crust
1/2 cup brown sugar
1/3 cup all purpose gluten free flour (I like Domata Living Flour)
1 cup chopped pecans
1 stick butter

Heat oven to 375, and prepare a medium size casserole dish.
Mix filling ingredients by hand.
Pour into dish.
Combine top crust ingredients in a bowl.
Sprinkle over top of the filling mixture.
Bake 30 minutes.

Bumble Bags at Babies R Us

Check out the new collection of Bumble Diaper bags at Babies R Us. These bags are super cute, and have enough room to carry all of stuff that I have to carry for my two little guys.

Gluten Free Banana Bread

Danielle made Banana Bread for the boys this morning. It was delicious. Here is the recipe

1 1/4 cups Domata Living Flour
(you use any mixture of all purpose gluten free flour, but we love the Domata)

2 tsp baking powder
1 1/2 tsp cinnamon
1/2 tsp salt
2 large eggs (room temp)
1 cup sugar
1 1/4 cups mashed bananas (approx 3 bananas)
2 tsp vanilla extract
1/2 cup vegetable oil

1. Preheat oven to 350 degrees. Grease a loaf pan with nonstick cooking spray. In a large bowl mix together four,baking powder, cinamon, and salt.

2. In a small bow, whisk together the eggs, sugar, bananas, vanilla, and oil. Stir wet ingredients into the flour mixture. Pour batter into pan. Bake about 50 minutes. Cool and enjoy!
